1. Zucchini, avocado, bell pepper, jalapeño salad w/ raw cilantro-lime dressing recipe:

    What you need:
    - 1 jalapeño
    - 1 green bell pepper
    - 1 zucchini 
    - 1 avocado

    For the dressing:
    - chopped cilantro
    - chopped garlic
    - cold-pressed extra virgin olive oil
    - 1 lime, rolled & squeezed

    Directions:
    - mix your dressing in a small container (I like to reuse baby food jars to store)
    - roughly chop your avocado, peppers & zucchini 
    -toss together in a bowl and serve!
