1. Perfectly Roasted Seasoned Potatoes

    What you’ll need:

    • 1lbs chopped potatoes, any kind
    • 2 tablespoons canola/olive oil blend (or any other high-heat oil)
    • fresh rosemary, finely chopped (any dried herbs will work too)
    • garlic, white pepper & nutritional yeast (to taste)
    • sea salt (added after roasting!!)

    Directions:

    • Preheat oven to 425°F
    • In a roasting pan, toss the potatoes with everything but the salt
    • Roast for 30-45 minutes stirring twice throughout

    When potatoes are crispy and browned on the outside, remove roasting pan from the oven and toss potatoes with sea salt while still hot. Be careful not to burn yourself! Serve as a breakfast side or incorporate them in a main dish. The leftovers make great filling for vegan burritos! Enjoy ~ EA
