Raw photo-a-day 10: freshly squeezed lime-lemonade. 

Recipe: for a small pitcher I used 3 lemons, 1 lime, a good squeeze of raw agave, water & ice.

Raw photo-a-day #4 “citrus sunrise” smoothie recipe:

1 nectarine, 1 apricot, 2 oranges, frozen raspberries, a drizzle of #raw agave and a small piece of fresh ginger root. #eaeats  (Taken with instagram)

Raw vegan “lasagna” recipe:
This is an easy (albiet time-consuming) recipe with tons of room for variation according to your personal tastes. I don’t measure anything so you’ll need to experiment with portions using your best judgement. Feel free to substitute ingredients as desired…
What you’ll need:
1 zucchini, sliced thinly
a food processor
(for the seed “meat”)
1 handful of raw sunflower seeds
1 palmful of raw flax seeds
fresh garlic and oregano to taste
small amount of water
(for the pesto)
fresh basil and garlic
large handful of spinach
green onion
cold-pressed EVOO
s + p to taste
(for the marinara)
1 handful of cherry tomatoes
basil and garlic
(for the marinated mushrooms)
crimini mushrooms, thinly sliced
cold-pressed EVOO
Nama Shoyu (raw soy sauce)
finely chopped green onion
Directions:
combine your ingredients for the marinated mushrooms and set aside
thinly slice your zucchini and set it aside
combine your seed “meat” ingredients in the food processor, pulsing until it has a rough, almost “sausage-y” texture. set it aside for later steps
repeat with your spinach pesto ingredints, blending w/ enough EVOO until it has a smooth consistancey, set it aside for later
prep your marinara in the food processor, same steps as before.
once you’ve got your various fillings prepped, you can begin layering them as you would with a traditional lasagna recipe.
Feel free to top it of with fresh cracked pepper & a glass of organic red wine on the side for a very special, raw vegan “lasagna” dinner!

Just as a heads up on the “raw lasagna towers” I’ll be posting tonight

It is a fairly time consuming meal to prep and will require a food processor & several more ingredients than the recipes I usually post. With that being said, it you have the time it’s really an inexpensive meal, plates up beautifully and you are welcome to substitute any ingredients mentioned with things you already have on hand…

When eating raw, no matter what you come up with, as long as it looks appetizing it will almost always taste good too. (:

The photo-a-day challenge?? Yep, I created it actually! (which sounds like a silly thing to say, but I mean, I started the challenge and coordinated it & everything so, yeah haha) Today’s challenge is “smoothie time!” hence the abundance of smoothies, and tomorrow’s is a picture of your raw dinner. :)

Zucchini, avocado, bell pepper, jalapeño salad w/ raw cilantro-lime dressing recipe:

What you need:
- 1 jalapeño
- 1 green bell pepper
- 1 zucchini 
- 1 avocado

For the dressing:
- chopped cilantro
- chopped garlic
- cold-pressed extra virgin olive oil
- 1 lime, rolled & squeezed

Directions:
- mix your dressing in a small container (I like to reuse baby food jars to store)
- roughly chop your avocado, peppers & zucchini 
-toss together in a bowl and serve! 

This meal is 100% raw and vegan. :) enjoy xxo EA
